At the end of Emily in Paris season 5, Emily Cooper has a huge decision to make: does she stay in Italy with her dreamy Italian boyfriend, or return to the life she built for herself in Paris?

Emily ends up walking away from an amazing job opportunity and her boyfriend to focus on herself — and for Lily Collins, who plays Emily, she thinks she made the right call.

"I loved it," Collins, 36, says when speaking with PEOPLE on board the Venice Simplon-Orient-Express on Dec. 13. "I feel like each person Emily's with teaches her so much about what she needs and doesn't need, wants and doesn't want, which I think is very realistic in our own lives."

In the finale, Emily and boyfriend Marcello Muratori, played by Eugenio Franceschini, are on a trip to Venice, Italy for Marcello to debut his clothing line during fashion week. While they sneak in romantic dinners during their stay at the St. Regis Venice, it all comes to a halt after his mother announces that she's giving over the reins of their family's luxury cashmere company to Marcello. That gives Emily a dream job opportunity to lead the brand's marketing — but it would mean having to move to Solitano, a small town outside of Rome.

"I think that there was this kind of fairytale dream that came with Marcello," says Collins. "And [Emily] really does appreciate, respect and love him as a human. But I think she acknowledged that it wasn't the life that she wanted and she wasn't done living the exploration of herself yet. And it wasn't that it would have been a bad life, it just wouldn't have been the fulfilling, correct life for her in this moment. And so I really liked that she was brave enough to make that decision. And as painful as it was, it was done with love and respect. And I appreciated the way that they both said goodbye in a sense."

As costar Ashley Park points out, it was "really adult" of them. She tells PEOPLE, "You know what I noticed in watching it? I realize Emily's always giving, she gives, gives, gives so much. And it's like when is there a partner for her that is able to do that for her and cheer lead her? And be like, 'Well, what's happening at work? How can I help you here?' It was interesting. I didn't notice that until we watched it."

For Collins, she's also happy that after the breakup, Emily returned to Paris more determined than ever.

"We don't leave the season with [Emily] broken. She's at work, Minnie Driver's character Jane comes in and it's like 'Uh-oh,'" Collins says, referring to the icy onscreen relationship between the two.

"But [Emily] walks in in this red suit and she's like, 'I'm good. I am good.' And I really like that because I don't want to leave her crying. I don't want to leave Emily a mess. I want her to have gone through stuff and be okay, I think it's important," says Collins.

While it's unclear exactly how Emily will function alongside Agence Grateau's new hire, Princess Jane, she may have another excursion ahead of her.

In the final scene, Gabriel (Lucas Bravo) writes Emily a postcard like he promised, inviting her to meet him in Greece.

When asked if Emily should head there next, Collins exclaims: "Yeah. Why not? Hello!"

"Look, we don't know if we're going to a sixth, but I would love to go to Greece," she adds.
